This is always a fun time of year, the weather starts to get cooler, the leaves change color and you get to break out the candy and cool decorations. I know some people who go all out on this particular holiday. They put out their best scary decorations and even build a life-like haunted cemetery or house.

This year I’m keeping it low key, with all of the suffering and chaos on the East coast because of Hurricane Sandy, I can’t see celebrating to the nines when some people don’t even have power or food. It also seemed like October came and went, we’re almost to the end and I haven’t had anything ready.
Well I do have one thing….

GLITTER PUMPKINS!!!

These are so easy to do, all you need is craft glue and glitter. Paint the pumpkins with glue, sprinkle the glitter on, shake off the excess and leave to dry overnight.

Halloween doesn’t have to be expensive either. Make a home made ghost costume out of an old bed sheet or black paper bat decorations like these.

Or throw some face masks, Michael’s has tons of them on sale right now, on pumpkins if you don’t feel like carving.

Ahhh tomatoes, as Summer officially comes to a close this is the thing I will miss most: Heirloom tomatoes. I found a big, ripe, yellow one at my local farmer’s market a couple weeks ago. It was sitting there among other not so pretty ones that were either bruised, broken or scared. This particular tomato did not end up on my sandwich but another red, juicy one did. I made this recipe up while trying to find a way to incorporate some of my favorite things into a sandwich (I’m kind of big on those). Anyway, here is a totally healthy, totally delicious sandwich that I am sure you will love, just remember it is big so if you can’t finish it all….send it to me jk, enjoy!

AL&T SANDWICH

- Two slices of wheat bread, toasted
- One Tablespoon Vegenaise
- One Tablespoon Dijon Mustard
- One big slice of an Heirloom Tomato (if you don’t have a big one you can use two small slices)
- 1/4 cup mixed greens
- 1/4 Avocado sliced
- Sea salt & pepper

First, toast the slices of bread. Then mix the vegenaise and Dijon mustard together until smooth. Spread the mixture evenly over the two slices of bread. Take your pre-washed greens and spread them over one side of the bread. Cut one, big slice of the Heirloom tomato, enough to cover the whole piece of bread and lay it on top of the greens. Give it a pinch of sea salt and pepper if you wish. Then cut the 1/4 avocado into slices, you should have about 4 or 5 slices when your done. Lay the avocado slices over the tomato and salt and pepper again. Lay the other piece of bread over the avocado and cut in half. Most importantly, enjoy!

Let’s get things rolling…

So I just spent the weekend in Half Moon Bay, CA. Well only a day but it still felt like a weekend to me! Himself and I took a drive to Pescadero which is just down the way from Half Moon Bay, if you have never been you must go. Not only are the beaches beautiful but there is the cutest, little town I’ve ever seen and it’s going to be featured in this very first blog.

Welcome to Pescadero…

This is a picture I took is the beginning of downtown. I’ve heard one of the best restaurants is Duarte’s which is the big, red building to the right of the picture. Also, I’ve heard they have amazing pies. I have to admit I picked one up for my family while I was here. Also, stop by the Pescadero Country Store for tasty sandwiches or Arcangeli’s Grocery Co. for really good Artichoke bread. That is what we did and had a picnic right across the street and the beautiful beach.

It’s not a very big town and at all, to be realistic everything you need to see is in one block. There are two really pretty, old churches I saw but only took a picture of one. If you’re ever in the area stop by and gaze at it in real time. It’s worth it!

So there you go, this was my view of Pescadero last weekend. I hope it inspires you to take a trip out to see it. It really is a lovely town. Hang around for the next chapter!
